CARY HALL: The Bittersweet History of Chocolate: What Makes Chocolate Good?

· ·

Social anthropologist Carla D. Martin traces the history of chocolate from Mayan temples through the transatlantic slave trade and the rise of Hershey’s and Nestlé to labor on cocoa farms today, and asks how chocolate’s social goodness might be measured alongside its taste. Martin lectures in African and African American Studies at Harvard and founded the Institute for Cacao and Chocolate Research. A chocolate tasting follows.
